Selection and preparation of ingredients
Mushrooms are selected with the following characteristics:
- medium or small size;
- healthy, without rot or stain;
- with the same hat shape and middle leg;
- they should grow on healthy stumps, trees, moss edges, and not on dust.
All ingredients of this dish should be fresh, without spoiled parts and thoroughly washed in running water. Carrots are peeled and washed, onions and garlic are peeled, greens are sprinkled with water, and high-quality spices and dry herbs are selected.

Korean mushrooms

- Pour salt into boiling water and boil mushrooms in it for about 10 minutes.
- Drain and cook the marinade, while honey agarics cool.
- Mix salt, sugar, vinegar, pepper and garlic pressed with a crush in water.
- Cut the onion into small slices and put half in the bowl, lay out part of the mushrooms in the second layer, the rest onion in the third, and the remaining mushrooms on top.
- You need to marinate for 6-7 hours. So that the dish is well saturated, it is worth putting oppression (a liter jar of water), and remove the container in the refrigerator.
Important! Such dishes are best said not for single use, but in the form of blanks for the winter.
Korean mushrooms with carrots

Nutritional value per 100 g:
- Rinse the mushrooms, cut off the lower third of the legs and cook in boiling water for 20-25 minutes.
- Discard on a metal sieve or colander, rinse with running water and fry over medium heat in sunflower oil for 10 minutes.
- Add oil, add chopped onion and fry for another 10 minutes.
- Peel and cut the carrots thinner, cut the garlic into thin slices and add to the pan with mushrooms.
- Pour pepper, salt, mix and put in sterilized jars.
- The liquid that remained in the pan should be diluted with vinegar, sunflower oil and add sugar, diluted in a glass of water.
- Pour the marinade into the jars neck, cover them and sterilize for 40 minutes.
- Roll up cans, turn over and wrap until completely cooled.

Korean Chili Peppers

- Boil the mushrooms for 20-25 minutes in salt water and discard to drain for 30-40 minutes.
- Grate carrots on a coarse grater, add it to the mushrooms, add vinegar, oil and mix thoroughly.
- Add garlic, salt, ground pepper and sugar, squeezed out by the press.
- Cut chili peppers into thin strips and add to the mass along with Korean carrot seasoning.
- Arrange in small jars and sterilize for up to 1 hour.
- Close with nylon covers for preservation, cool and put in the refrigerator.
Important! It is advisable to rub carrots on a “Korean” grater so that this component of the dish is juicier.
Korean sweet mushrooms with sweet pepper

- Boil the mushrooms in salt water with citric acid for 20-30 minutes.
- Fold into a colander and drain.
- Peel and finely chop the carrots or grate it, pour boiling water on it, let it cool, squeeze it out and add the glassy mushrooms.
- Add finely chopped sweet pepper, squeezed garlic, onion in half rings and mix everything thoroughly.
- Pour sugar, salt, pepper, pour vinegar and oil, mix and set aside for two hours.
- Put the mass in jars and sterilize for about an hour.
- Roll up the covers, turn over and wrap the blanket until it cools.
