Bruschettas are a universal appetizer for a festive table and for meeting dear guests. Cooking them is easy and simple, and the ingredients are found in every refrigerator.
After all, in fact, you can decorate slices of toasted bread with absolutely any products. It can be mushrooms fried with onions, cream cheese and fresh cucumbers, stewed vegetables and sauce, jerky and pickled cucumbers ... You can go on forever! But today we offer you to surprise your guests simple. But refined and unusually tasty bruschettas with sun-dried tomatoes and pickled cheese.
Just imagine: a slice of porous and crispy ciabatta is decorated with a layer of delicate cheese, and the picture is completed by a bright, juicy and odorous dried tomato. We don’t know about you, but from these words alone we caught inspiration by the tail and we run towards the supermarket for the necessary ingredients. Fortunately, they are quite affordable and simple!
Sun-dried tomatoes are the best friends of tender cheese!
So, to make the original bruschettas in the Italian manner, you will need:
- 2 ciabatta;
- 300 g mozzarella cheese;
- 200 g of sun-dried tomatoes;
- cilantro (or other greens);
- olive oil (or any other vegetable oil that you like and that you have);
- salt;
- freshly ground black pepper.
Do not forget to cook the bruschetta sauce! To do this, you will need:
- 1 bunch of parsley, cilantro or basil;
- 70 ml of vegetable oil;
- 1 clove of garlic;
- salt.
Well, for an effective bruschetta serving, stock up on fresh tomatoes, avocados and herbs.

Immediately prepare the sauce. Grind the garlic using a press and send into a blender bowl along with herbs and olive oil. Grind until smooth and salt.
Mozzarella need to be cut into medium-sized pieces or simply torn into fibers. Cut the ciabatta in half lengthwise and grease with olive oil (just a little bit). We send the bread to the oven preheated to 200 degrees, set the top-to-bottom mode and dry the ciabatta for about 5 minutes until it is browned.
After that, let the bread cool slightly, put cheese and sun-dried tomatoes on it. Again, send to the oven - for about 10 minutes, until the cheese melts. But make sure that he does not start to blush! Mozzarella just has to become soft and viscous.
Bruschetta can be decorated not only with sauce and nuts, but even with flowers!
Again we get the bruschettas, let it cool slightly, then sprinkle with salt and pepper, sprinkle with green sauce and decorate with sun-dried tomatoes from a jar.
Sprinkle ciabatta with fresh herbs, avocado cubes, slices of fresh tomatoes, add a couple more drops of sauce and serve to the guests!
